A food connection taking shape between Barbados and Texas

For a sauce maker, choosing an ingredient involves several questions. How does it taste? How consistently can it be produced? How will it reach the kitchen or production line?

Those questions are helping shape a developing connection between Barbados and Texas. One early focus is Barbadian pepper mash: a bulk ingredient being explored for sauce manufacturers and other commercial food customers in Texas.

The work brings product development and market conversations together. On the Barbados side, Export Barbados manufactures and supplies the mash, with the International Food Science Centre serving as the manufacturing site. The Texas-side work includes understanding prospective buyers’ needs and exploring the arrangements for importation, refrigerated storage, and distribution.

There is still work ahead. Product specifications, commercial terms, and the practical route to market need to be established before a pilot shipment can move forward.

Through Savor the Sweet Life, we will share the story as this connection develops: the ingredients at its centre, the people behind them, and the questions that help turn an opportunity into a workable relationship.
